Today, creativity was tweaking an old chocolate chip cookie recipe
to suit new dietary needs!

Chocolate Chip Cookies for Everyone
(vegan, gluten-free, and delicious!)
makes 5 dozen cookies
cream together:
1 cup Earth Balance
1 cup organic sugar
1 cup brown sugar
then add:
6 tablespoons aquafaba
1 teaspoon vanilla
then slowly mix in:
2 cups gluten-free 1-to-1 flour
(I use Bob's Red Mill 1-to-1 Gluten-Free)
2 1/2 cups gluten-free rolled oats (pulsed until a coarse flour)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
finally, mix-in:
1, 12oz. bag (vegan) chocolate chips
Roll dough into 1" balls and place 2 " apart on parchment paper lined cookie sheets. Bake at 375 degrees fahrenheit for 10 minutes. (If baking 2 cookie sheets at a time, switch racks halfway through.)
